Avocado on toast with eggs

 

If I had avocado on organic sourdough toast with eggs at my favourite local restaurant it would cost £10.95.  My breakfast this morning cost 62p!!  

My home made sourdough bread (made with organic flour) works out at 6p a slice.

Eggs (medium free range from Tesco) are 25p each.

Avocado (frozen) was 'free' from M&S with my coupons.

Total 62p! 😋

I popped into Waitrose last night after dropping my son off at work and picked up some reduced whipping cream (and sweets!)  I had some loose change in my pocket so used that.  I knew you could use whipping cream to make butter but I'd never tried it.  600ml produced 250g of butter and 300ml of buttermilk.  I think that's less butter and more buttermilk than using double cream.  But I'm not sure if that's true.

  1. Very posh. I would like that for breakfast with poached eggs. I don't mind fried but prefer poached if they are fresh enough. I envy your bread and butter making. I can't knead bread - I get panicky if I have sticky hands - heavens knows why, it is so stupid 🙄☹️😒but there you are, I just can't do it.

    1. I love poached eggs but don't have the patience to make them. For icky/sticky jobs I wear disposable gloves. Years ago when I was first married I couldn't touch raw meat and had to wear rubber gloves!! It's not stupid to dislike having sticky hands. Nowadays I can do most yucky jobs but I do wash my hands immediately and thoroughly!! :-) xxx

    2. Even with gloves I struggle with sticky stuff 🥺. I can just about manage to cut up some stem ginger. The annoying thing is I have no idea why I react like that. Cobweb and other sticky things make me panic.
      Poached eggs I just bung gently into simmering water with vinegar for about 3 minutes for large/fresh. Never chefy pretty, but always tasty 😋

  3. Great savings on your breakfast. I have never had an avocado, they are really expensive here and I am afraid that if we didn't like them I would have wasted a great deal on the purchase.

  4. I love avocados but have wasted so many letting them get too ripe! I didn't know you could get them frozen, (maybe not here) as that would solve the problem of wastage. Now I keep them in the fridge until the day before I want to eat them.

    1. The frozen ones are marketed at people who make smoothies and are beside the frozen fruit in the freezer section. The M&S ones have a little salt to stop them browning but they don't taste salty. It's easy to just take out as much as you need and not waste any :-) xxx

  5. Lovely breakfast, cooking at home saves a fortune. I live in KZN South Africa in the uk winter, avocados grow wild here they are so big we have half each with salad in the hole for lunch. I ripen them on the kitchen worktop but they have to be checked a few times during the day as they turn mushy very quickly.

  6. One of my favourite breakfasts, made at home and, as you say, so much better value. I use the M&S frozen avo chunks too - they're so good and no waste (apart from the bag). xx
