The challenge is on!

So it's now been 11 days since I've been to a supermarket.  Yesterday I used up the last of my fresh veggies to make a huge pot of tomato sauce.  Some of it is already bagged and frozen.  The only fresh produce I have left now is 3 ripe bananas.  I'm not planning any supermarket visits in the near future so the challenge is now on to eat healthily from my freezer, storecupboard and garden!!  This will help me work out how self sufficient I can be in the future.

Last night's meal was some rice, tomato sauce and the last of my vegan cheese.  It was ok.  It lacked something so I soaked some pinto beans overnight and cooked them this morning.

Today's lunch was rice, pinto beans and tomato sauce with Nutritional yeast to add a cheesy flavour.  It was actually not bad so I'll be making this one regularly.

It was a bit of a chilly day so I lit the woodburner.  Emma does love lying as close as she can as soon as I light it!!

Toasty!

Tonight's meal was some leftover macaroni cheese with sprouts and green beans from the freezer sauted in garlic and chilli.  I'm noticing my meals are quite starchy so I'll keep a eye on that.  Doing the daily Joe Wicks workouts will help!!

Working from home is going well although I'm not liking being tied to the laptop most of the day.  I need to be 'available' between 9 and 3 to support parents with home learning.  So far only 3 out of 18 parents are regularly interacting.  Maybe things will change the longer this goes on.

Stay safe and stay home everyone! 💗

  1. I commend you on your ability to practice complete isolation. I expect you will have to go out at some point but so far you are an exemplary master of the directive.

    1. Thanks! I'd like to see if I can actually do it. Thanks to modern technology I'm in contact with friends and family daily so unless the power goes out I don't feel on my own

  3. I don't know how you do that 'living' pic of your fire, but it feels warm just looking at it! I'll be really interested to see how you do with not going shopping, just eating what you have. Good luck!

    1. Thanks. I use google photos to store my photos. It has a function to create an animation. I just take lots of photos of the same thing and it can make an animation for you. Like my profile pic :-)

  4. Good luck with your challenge, I had to venture out for the milk yesterday, it was very civil in the supermarket and everyone was sticking to the guidelines. I got some large longer life milks and whilst I was there stocked up on fridge items, I thought it was silly just to go for milk, so we are sorted now for a few weeks.

    1. So far people I know who have been to a supermarket have said it's ok. I'm aiming for a month without going

  5. Our daughter is getting us milk, eggs and fresh fruit and veg, we have a few farm shops around, who have stepped up their produce. We do have a click and collect end of next week, again daughter will collect, the supermarkets have made this as safe as they can, no contact, pay online and drive up, show paperwork through window and then they bring out your shopping in (sadly) carrier bags, once they move away you get out car and pop it in the boot and drive off.

    1. Shame about the carrier bags but we can deal with them later. I do agree that the supermarkets are trying very hard to make it safe and fair for everyone to get what they need.

  6. On the plus side at least the Easter holidays are coming up soon and you can get a break from it. Can you imagine how much worse this would have been had it happened in January! You're doing very well. Unfortunately, although I think I could live out of my stores for much longer, I'm having to brave the supermarket weekly to take my mum some stuff. Today I had a 'chat' with her about trying to plan a bit further ahead than she's currently doing. I told her she'll have to get used to not getting some of her favourite things. Because she's been in isolation she's not aware that the shops have a much reduced selection of things. She always buys these bags of lettuce leaves and I've been trying to persuade her to get a proper lettuce as it will last much longer, I think today I've finally got through to her! Its very difficult for elderly people to understand this, she was too young during the war to fully understand rationing and she's too old now to fully understand the current form of rationing again. I have so far managed to avoid Jo Wicks! I'm walking the dog and I know its not really enough but I'm feeling lazier by the day!! Take care. x

    1. One more week until official school holidays then I can put 'work' aside and crack on with house and garden stuff. It must be hard for some elderly people to fully understand the situation. Sometimes my dad says things that show he's not quite fully aware of how bad it is out there. Look after yourself xxx
