Souper soup


I chopped up the overgrown courgette (zucchini) and made 7 mugs of Courgette and Leek soup.  I chopped up 2 leeks from the back garden and chucked them in a pot of chicken stock (made from the bones of the large chicken I got last week) with a onion and a spoonful of stock powder.  I blitzed it with a little soya cream and voila - work lunches for the next week or 2 sorted.

They're now in the black freezer along with 6 mugs of Chicken and rice soup I made yesterday with some stock I defrosted on Saturday.  

I think there are still a couple of mugs of soup in the garage freezer (no idea what kind) which gives me enough lunches for work for the next few weeks.  I do love my soup! 😋

  1. Your soup will come in handy during your work week. I usually grate my zucchini (the overly large ones) to use for loaves, muffins and cake.

    1. Soup is such an easy work lunch for me. A few mins in the microwave and I can take it back to my class if I'm working through my lunch break

  2. You are certainly very industrious and economical, Ali! I gave up making soup during the really hot weather but should start again as the weather has turned more Fall like. My favourite is carrot and lentil. I seldom buy a whole chicken but would dearly love to have a carcass for soup.

    1. Like you I don't often buy a whole chicken but it's worth asking your butcher. Mine has chicken carcasses and bones available but they're not out on display!

    2. I like to buy a whole chicken just so I can make soup from the carcass!! Once it's cooked I pick it over so I get as much meat as I can off it then box it up in portions and freeze it. I've got 6 boxes of cooked chicken in the freezer, had a stir fry last night with some and put some of the tiniest bits in my chicken and rice soup. It does loads of meals! But I also like the idea of getting a carcass from the butcher!

  5. Until the heatwave returned yesterday, I was thinking about making soup of some kind. I really like your mugs, Ali. Are they Sistema ones? Catriona

    1. Yes they're Sistema. Every time I saw them on offer I picked up a few more. I think I have 14 now. Some of them are at least 8 years old as I had them in my old house!

    1. I love them! You just fill them and freeze. Then take one out the night before and bingo, instant lunch/supper. Microwavable and dishwasher proof too!
