Today I'm feeling much better but I haven't done anything except rest in my bed for 3 days! The last time I was ill my son and his fiancé were still living with me so they kindly brought me food and endless hot drinks. This time I've had to fend for myself.
I really haven't had an appetite so I've been making myself eat regularly, Luckily I made a big pot of the chicken soup and that fed me for 2 days. Today I felt the need for some fresh veggies so had a few salady type snacks with chopped up cucumbers and peppers. But I really craved something comforting and sweet. So I made a very quick rice pudding.
Just rice, coconut milk and soft brown sugar thrown into my wok (it's the only big non stick pan I have) and simmered for about 20 mins. It's caramel taste really hit the spot and being dairy and gluten free it's easy on my tummy!
